抄録/ポイント： 一次大豆油の貯蔵安定性に及ぼす植物ステロールの影響を研究した。種々の添加量(0%,0.05%,0.1%,0.1%,0.15%,0.2%,M/M)の大豆油を,45°C,25°C遮光条件下で貯蔵し,貯蔵中の大豆油の品質指標の変化を測定した。その結果,45°C遮光条件下では,ステロールの添加量は0.1%を超えず,そして,ステロール濃度の増加とともに,大豆油の抗酸化作用は著しく増加した(P<0.05)。一方,ステロールの添加量が0.1%以上のとき,抗酸化作用は減少した。25°C遮光条件下で,植物ステロールの添加は,ダイズ油の抗酸化作用を有意に強化した(P<0.05)。ステロール濃度の増加とともに,抗酸化作用は増加した。ステロールの添加量がある程度になると,酸化防止作用はステロール濃度の増加とともに増加しなかった。ステロールは大豆油の貯蔵過程において抗酸化作用があり、顕著な用量効果関係がある。Data from the ScienceChina, LCAS.
