【要約】【構成】 大麦β-アミラーゼの1775塩基からなるcDNAの全塩基配列を決定し、β-アミラーゼの一次構造を明らかにするとともに、該cDNAを発現ベクターに組み込んで、さらに該ベクターを微生物に組み込んで組換えβ-アミラーゼを得た。【効果】 安定した且つ安価で効率の良い組換えβ-アミラーゼの生産が可能となった。
