抄録/ポイント： 本報告は,野菜の品質を評価する新規方法をレビューした。使用機器は,物理的方法,イオン選択電極(ISE),液体クロマトグラフィー(LC)(高速液体クロマトグラフィー(HPLC),超高速液体クロマトグラフィー(UPLC)),ガスクロマトグラフィー(GC),可視(Vis)分光分析,近赤外(NIR)分光分析およびVIS-NIR分光分析を含んだ。さらに,透過性,多汁性,硝酸イオン,リコペン,グルコシノレート(GSL),イソチオシアン酸塩(ITC)定量,迅速総食物繊維(TDF)定量および非破壊定量を記述した。(翻訳著者抄録)
