抄録/ポイント： 精製油と同様の結果を与えるCandida antarcticaリパーゼBを用いて,TAG中FA分布を測定する方法に関して,粗大豆油と粗菜種油を対象とした。粗油中の微量成分のFFAやリン脂質の割合等は,リパーゼによる1(3)選択的エステル交換および得られた2-MAG画分のFA組成分析に大きな影響がないことを示した。リン脂質は,2-MAG画分を汚染しないことを確認した。PVが10meq/kgの酸化大豆油もまた,精製油のものと同様の結果を示した。本方法は,PVが10meq/kg未満の粗油および酸化油について,TAGの前精製なしで適用可能であることを確認した。(翻訳著者抄録)
