13C-NMRを用いて測定したとき約79mol%〜約95mol%のιカラゲナン及び約0.1mol%〜約10mol%のνカラゲナンを含んでなる組成物であって: 1.2重量%水性ゲルにおいて約20%より大きい弾性率の損失(5°Cと25°Cの間の%ΔG’)を示し;そして、 1.2重量%水性ゲルにおいて約20%より大きいゲル強さの変化(2mm、5°C〜25°C)を示す組成物。
