Research overview:
In order to utilize less popular livestock products (adult chicken meat, beef from overmatured cows, entrails, and bones), this study develops the technique to improve the meat quality of old cows, the technique to add finely crushed chicken bones into food, and develops new products utilizing the above techniques.
