Research overview:
In order to upgrade the competitiveness of shochu, whose tax has been increased by revision of liquor tax regulation, the study explores means of cost reduction and quality improvement. Traditional manufacturing process is revised, and a novel manufacturing process using commercial enzymatic agent is developed.
