Flour-milling and noodle-making industries are suffering a critical situation owing to the depressed price and consumption, and it is an imminent issue for them to develop high -value added products having distinguished local features. Improvement of self-suuply ratio of foods as a national strategy is another impact for such development, and the construction of a structure for local production and local consumption and full-scale production of wheat are demanded. Upon this background, the utilization of in-the-Prefecture wheat for the local specialty of "ise-udon" noodles is focused as the most promising and effective technical development in the Prefecture.
