In order to attempt the effective utilization of Mizunasu, which is a juice variety of eggplant and a regional specialty of Osaka Prefecture, of off-specification grades to food, methods for drying and slurry preparation to take advantage of the color and useful components of the material were studied and basic information is obtained for converting it to a food material.
