Enzyme reactions under the high pressure condition

If an activation system of an enzyme to a substrate is different between under the high pressure and under the normal pressure, there is possibility that such differentiation can affect products and a new food material and a functional food material could be developed. For aiming at a development of the new food material, study is done on new process technology related to an enzyme reaction under the high pressure.
