Thanks to the advanced packaging technology more and more foods are preserved for a long period in vacuum after cooked. But it is necessary to examine the influence by heat-resisting anaerobes. In this context we take a grasp of the reality of food polluted with them in Niigata Prefecture and their dynamics in packaged foods to commit ourselves to the prevention of food poisoning.
