Research overview:
The existing cheese is not conformed to Japanese tastes because of their strong flavor. Therefore, it is necessary to investigate the properties of cheese according to the difference in composition of raw milk, production procedures and production condition, and find a method to produce such cheese as conformed to Japanese tastes.
