Food prepared from such massively caught fish as sardine and mackerel are developed for the utilization of their functional components. The contents are the following : 1) Development of processed food in the same forms as the fish, 2) Development of processed food prepared by the texturization and the like of the fish meat, 3) Development of processed food by the extraction and the like of the fish meat, 4) Development of processed food by the conversion of the fish meat to paste, and 5) Research on the keeping quality of food.
