Screening of Z. rouxii Suitable for miso fermentation

Yeast is one of useful bacteria utilized for miso production, and selection/utilization of excellent yeast species leads to quality improvement of miso products. In order to search yeast species suitable for miso fermentation, the technique that precisely and rapidly identifies yeast species for miso fermentation at the bacterial strain level is required. Thus, the method to assort Z. rouxii, a major fermentation yeast species at the bacterial strain level was studied using gene-engineering techniques.
