Research overview:
Our study is to establish the diagnostics system judging quality and taste, and to establish its improvement system in order to standardize the quality of the Yamagata made rice such as the branded rice 'Haenuki' and 'Domannaka' at a high quality level to wind the competition among the rice producing districts. Our study aims at establishing the system to grasp the processing characteristics of the hopeful varieties and establishing the cultivation technology in accordance with the demand and application for the glutinous (mochi-gome) rice and rice for making rice wine.
