There is a custom for preparing IZUSHI such as AYU NARAZUSHI, NEZUSHI etc, in Gifu Prefecture and few of them are put on the market. Investigation related to the public taste of the IZUSHI and study of manufacturing process using lactobacilli are performed by using the developed material.
