Minerals are important nutrients for skeleton formation and physical harmony. Japanese people easily suffer from osteoporosis or hypertension. One of the reason is considered to be that they intake less Ca and more Na than the required levels. For the purpose of improvement of the menu planning, the cooking processes, and the eating habits, this study presents the data about the variation of mineral contents in foods by cooking processes
