Chlorophylls is susceptible to light, temperature and oxygen and decomposed. These reactions are different depending on the situation of whether chlorophylls are in the state of being free or are combined with the food constituents. Study on the interaction with food constituents to understand chlorophylls behavior within the food is to be conducted.
