Investigating Researcher (2)：
Development of rice-based bread and noodles is in rapid progress under the intention for expanded use of rice. For this purpose, improvement in eating quality of basic rice is tried for easier dissemination of such rice products. More specifically, improvement of hydrophilic property of rice for better controlling of boiling and melting process of rice, and of viscosity for controlling eating quality are to be conducted.
