Research overview:
In Shimane Prefecture there exists large chikuwa (a kind of fish paste in cylindrical shape) called noyaki (field-baked) with a diameter of 8 cm max. A technique for baking chikuwa of such a large thickness is rather difficult to realize from the viewpoint of thermal conduction, and it depends on skilled person's know-how to a great extent even today. For that reason, we will research and analyze the raw materials, products and processes, to obtain basic data for trially manufacturing a control system for labor saving.
