Research overview:
In the sake-brewing industry, mechanization and automation of koji (malted rice) making process are needed because of the lack of skilled workers as they become aged. Specifically, development of equipment capable of making ginjo (unadulterated) koji is demanded. Therefore, we introduce a robot into a ginjo-koji process that is usually done by hand so as to obtain the same quality of hand-made koji.
