Research overview:
Yeast resistant to various chemicals without causing any variation is obtained in use for brewing. Blasticidin S resistant stocks are used for breeding refined sake. Sake is thus obtained which has a lower degree of amino acid than master stocks and more acidity. Tricocecine rsistant yeat provides a taste of higher alcohol concentration than master stocks because it may be in a more active condition than mater stocks.
