Kumamoto Prefecture is producing various fermentation foods such as wheat miso and others at present. In producing such fermentation foods, the microbial such as salt-resistant yeast and lactic is performing important roles. This study aims at creating the excellent strains by separating microbial from such fermentation foods and cultivating it.
