In order to breed a yeast producing a new flavour, we have isolated yeasts high-producing beta-phenylethyl alcohol at first. The yeasts have been justified whether the posibility oftheir use for sake making or not. At the same time, we have screened a characteristic flavour yeast from sake mash.
