Research overview:
Paddy rice named as 'Matsuyamamitsui' bred in Ehime prefecture is highly evaluated as material for sake, however, such unfavorable comments as deficient quality and quality fluctuation from brewery union are delivered, where disadvantageous properties of its small size and its deficient fruit are indicated. The current research is oriented to establish the culture technology to breed large sized rice・low protein suitable for sake.
