Various special products are produced in hilly and mountainous areas. New processed foods that made use of their characteristics are developed. 1)Development of processed foods making use of functional compounds of raw materials. 2)Development of processed foods using various treatments, such as high pressuer, expansion, electrolytic water and control of microbial growth. 3)Development of processed foods made from gain, and so on.
