Research overview:
The purpose of this study is to develop new cheese having characteristics of traditional natural cheese as well as regional characteristics. This study investigates the Wash-type Saint Paulands cheese, which has unique manufacturing methods, and finds the simple manufacturing ways applicable in regional farms.
