The saccharification of raw potato starch is far difficult than other starches, so studied the effective conditions for it. Examined on starch concentration of 20%, pH 3. 5-4. 5,45.DEG.C by three types enzyme GODO-CRA, Chalara paradoxa, Dabiase k-27, and about 1) the relation between enzyme degradation ability and kinds of source potato, starch properties, 2) the effect of use together with protease etc.
