As food components that contribute to health attracts much interest, search and quantification of functional components in Citrus tamurana Hert. mango, Momordica charantica L. and so on, which are the specialty vegetables and fruits in the Miyazaki prefecture, are performed to add value and contribute to establish advantageous sales and brand.
