substances in pork during the storage period were
investigated, and the possibility to determine the
freshness by using the nucleic acid related substances
as indexes was studied.
In addition, the determination of the freshness of
commercial domestic pork was tried by using the
contents of nucleic acid related substances.
The regression equation for the storage period and
mK value was obtained and used to determine the
freshness index. The mK value is given by
mK value (%) = (H x R + Hx)/(IMP + H x R + Hx) x 100.
The correlation coefficient between the storage period
and mK value was 0.933 and indicated the significantly
positive correlation (P < 0.001). Also, the relationship
between the mK value and the storage period gave the
following formula y(day) = -4.751 + 0.246 K (%),
and the determination of the freshness was feasible
(P < 0.001). In addition, the storage period estimated by
the regression equation obtained from the relationship
between the storage period and mK value was 3 to 12 days
for domestic pork and 13 to 17 days for imported pork.
