Research overview：
ワイン生産工程における亜硫酸の添加は、品質の確保に重要である。しかし、健康・自然志向の高まりにより、必要最小限の添加で抑えることが求められている。そこで本提案では、提案者らがもつバイオセンサ技術、ワイン醸造管理の知見を基に醸造工程中のワインに含まれる亜硫酸濃度を連続的に簡易かつ安価に計測するシステムを開発し、最適な時期に必要量添加できるようにする。
