Research overview：
味覚は食物を摂取するか否かを決定する上で重要な化学感覚です。私はこれまでに、旨味・甘味センサーであるT1R受容体の機能を解析するための培養細胞アッセイ系を構築しました。さらに、鳥類や霊長類において、T1R受容体の機能が食性と深く結びついていることを明らかにしました。本研究では、解析対象を脊椎動物全般へと拡大することで、嗜好味(旨味・甘味)とは何かという、おいしさの基本原理の理解を目指します。
