調理鍋と、この調理鍋の温度を検知する温度素子と、前記調理鍋を加熱する加熱部と、前記温度素子の検知温度に基づいて前記加熱部の制御方法を算出して制御する制御装置とを備えた誘導加熱調理器において、前記調理鍋内で天ぷら油などの油類を加熱する天ぷら調理の場合、前記制御装置は、加熱開始時に前記温度素子の検出温度が所定温度Tstより低いとき、加熱開始温度の設定を通常値より高く設定してから加熱制御を開始する天ぷら調理の加熱制御方法を行なうことを特徴とする誘導加熱調理器。
