純度が80モル%以上の脂肪酸乳酸エステル塩およびショ糖脂肪酸エステルを含む乳化剤組成物であって、脂肪酸乳酸エステル塩の構成脂肪酸は炭素数14〜22の脂肪酸であり、かつショ糖脂肪酸エステルの構成脂肪酸は炭素数14〜22の脂肪酸であり、脂肪酸乳酸エステル塩とショ糖脂肪酸エステルとのモル数の総和に対する脂肪酸乳酸エステル塩のモル分率が0.008〜0.15であることを特徴とする乳化剤組成物。
