下記性質を有する耐熱性グルタミン酸デカルボキシラーゼ: (i)85°Cで3時間処理した後に80%以上のグルタミン酸デカルボキシラーゼ活性が保持される、及び (ii)70°C以上で活性を示し、至適温度は約95°C以上である。
