両親媒性物質を含む膜を用いた味覚センサを使用する苦味の測定方法であって、少なくとも三種類の校正液を作る段階と、該校正液を測定する段階と、該校正液を測定したデータを重回帰分析しモデル式を導く段階と、サンプル液を測定する段階と、該サンプル液を測定したデータを前記モデル式に代入し、該サンプル液の苦味の強さを推定する段階とからなる苦味の測定方法。
