【請求項1】多糖類を含有する、消化酵素の反応抑制・遅延剤であって; 該多糖類は、ローカストビーンガム、及びグァーガムからなる群より選択される少なくとも1つであり、かつ該多糖類1wt%水溶液の動的粘弾性を、直径50mmの円錐-平板型治具を備える動的粘弾性測定装置ARES(レオメトリック・サイエンティフィック社製)を用いて、20°Cで測定した際、 (a)周波数0.1〜100rad/sの範囲においてG’’>G’であり、さらに (b)複素粘性率η*=(G’2 +G’’2)1/2/ωがニュートニアン平衡を示し、η*が1Pa・s未満であることを特徴とする、消化酵素の反応抑制・遅延剤。ここで、G’、G’’、wはそれぞれ、貯蔵弾性率、損失弾性率、および周波数を示す。
