【課題】単糖、少糖あるいはこれらの配糖体、多糖およびこれらの混合物などから安全、簡便かつ高収率でアンヒドロ糖を製造する方法を提供する。【解決手段】単糖、少糖あるいはこれらの配糖体、多糖およびこれらの混合物の中から選ばれる少なくとも1種類の水溶性糖化合物を原料とし、触媒などの添加物を一切加えることなく、糖化合物の水溶液だけを加熱することを特徴とする下記一般式(1)、一般式(2)および/または一般式(3)で示されるアンヒドロ糖の製造方法。【選択図】なし
