【請求項1】キチン含有組成物またはキチンからなる原料を、温度-時間平面における図4に示す近似曲線L1およびL2により画定される範囲である指定範囲に含まれる温度および時間で亜臨界水または超臨界水によって処理する第1工程と、前記第1工程において水熱処理された前記原料または当該原料から抽出されたキチンを加水分解する第2工程と、を備え、前記第2工程の前に、前記第1工程において水熱処理された前記原料を粉砕する粉砕工程をさらに備えていることを特徴とするキチン分解物の生成方法。
