【請求項1】 ムスク系香料に特異的な嗅覚受容体であるマウスOlfr1440(MOR215-1)嗅覚受容体、マウスMOR214-3嗅覚受容体及び/又はヒトOR5AN1嗅覚受容体を用いて、候補物質の中からムスク系香料化合物をスクリーニングする方法であって、少なくとも以下の工程: (i)候補物質の存在下又は非存在下で、細胞に発現させた前記嗅覚受容体を接触させる工程; (ii)指標となる値として、嗅覚受容体の電気生理学的アッセイの結果得られる値、細胞内シグナル量、レポーター遺伝子発現量又は細胞内のカルシウムイオン濃度を測定する工程; (iii)上記(i)及び(ii)に基づく結果について、候補物質の存在下又は非存在下での結果を比較する工程;及び (iv)前記指標となる値が変化した候補物質を選択する工程; を含む、方法。
