【課題】安定かつ安価なCALBを提供する。【解決手段】カンジダ・アンタークティカ由来リパーゼB(CALB)を細胞表層に提示し、かつリパーゼ活性を示し得る酵母。酵母に提示されるCALBは、特定の塩基配列の-7位のアラニン残基から317位のプロリン残基までのアミノ酸配列からなるポリペプチドまたは該アミノ酸配列の特定部位のアミノ酸が置換されたポリペプチドを含む。酵母の細胞表層CALBは、熱安定性が高く、高いリパーゼ活性を有する。上記酵母を用いて乳酸およびアルコールから乳酸エステルを製造する方法。【選択図】なし
