【請求項1】 糖脂肪酸エステルの合成方法であって、 (1)糖類の少なくとも1つの水酸基をヒドロキシ終端型(ポリ)オキシアルキレン基で修飾するために、エーテル化剤でエーテル化するエーテル化工程;および (2)前記ヒドロキシ終端型(ポリ)オキシアルキレン基の少なくとも一つの水酸基と脂肪酸のカルボキシル基とをリパーゼを用いる脱水縮合によりエステル化する酵素エステル化反応工程 を含む、合成方法。
